2 large sweet potatoes, peeled and cut into bite sized chunks
1 1/2 cups of green lentils
2 cans of coconut milk
2 12 oz can tomatoes
a big handful of fresh cilantro
1 tablespoon of turmeric
1 tablespoon of cumin
1 tablespoon of ground ginger
salt and pepper
Preheat oven to 350°F
Mix all ingredients in a casserole dish
Cover and cook for 1 hour or until sweet potatoes are soft
Serve with rice or by itself
