1 lb shrimp, cleaned deveined
1/4 cup olive oil
1 red onion, pureed
2 cloves garlic, finely minced
2 chipotle peppers in adobe sauce, finely chopped
1 large Anaheim pepper, finely sliced
2-3 tbsp absinthe
2 large tomatoes, pureed
1/4 cup freshly chopped, flat leaf parsley
salt and pepper for seasoning
4 oz feta cheese
Turn on broiler and place cast iron skillet beneath
Saute in olive oil until softened
Onion
Garlic
Chipotle and Anaheim peppers
Add shrimp and cook for 2-3 minutes
Add, bring to boil, cook 10 minutes
Absinthe
Tomatoes
Parsley
Salt and pepper
Transfer to hot cast iron skillet and add feta
Place under broiler until feta melts into sauce
