1 pound sea scallops (if frozen, make sure to thaw)
salt and pepper
4 tablespoons unsalted butter
3 garlic cloves minced
pinch crushed red pepper flakes
jasmine rice, for serving
Watermelon Salsa
1 ½ cups diced watermelon
1 jalapeño pepper, seeded and diced
1 small shallot, diced
¼ cup fresh cilantro, chopped
3 tablespoons freshly squeezed lime juice

Make salsa
Cook rice
Dry scallops then season with S&P
Medium heat
melt butter
add garlic and red pepper flakes
Cook scallops 3 minutes per side
